In the mountains around Lucca, in Garfagnana and Serrachione, chestnuts are abundant in the fall.
Villagers picked chestnuts in the forest and dried them for winter sustenance. Adding to the fragrance was the rosemary that grew in the gardens of the houses and on the stone walls.
On the other hand, wild ducks fly in on the plains and along the rivers. Since the Middle Ages, Lucca's lords and peasants have served ducks on their tables as game.
Lucca is also Chef Baldi's birthplace, and this dish is like seeing Tuscany in the fall!
