This time, green apples were used as a fruit to complement the duck, which will be in season from now on, and the duck's fatty flavor. Duck goes well with sweet and sour fruit sauces, and this time we added sweetness by compoting green apples, combined them with a compatible yogurt sauce, and finally topped with a cider vinegar vinaigrette.
